Q.How can I export "SENSITIVE" data fields, such as usernames/passwords, and see the real value of the fields in the export file? If I export as administrator, I still see "sensitive' for the field data in the export file.

A.Fields with the access attribute of "SENSITIVE" can only be exported by an administrator over a secure SSL connection. This means if you are using InterMapper RemoteAccess to export the data and you are logged on as an administrator, you should also ensure that "Use a secure protocol (SSLv3/TLS)" is selected in the Server Settings > Remote Server settings.
